From Cousin Lori's kitchen:

bullet6 8 Baking Potatoes
bullet2 Bell Peppers
bullet2 Medium Onions
bullet2 3 Tbsp Vegetable Oil
bulletSpicy Seasoned Salt
bulletGarlic Powder
bulletCreole Seasoning (Tony Chachere's)
Partially bake potatoes (microwave). Cut into large chunks (quarters or eighths).

Cut onions and peppers into good-sized chunks, add to potatoes in large mixing bowl. Pour into veggie mixture, toss.

Spread mixture in 9x13 or similar baking pan. Season to taste with Spicy Seasoned Salt (I use McCormick) and garlic powder.

Add a few shakes of Tony's (careful, it's a little hot!). Bake until veggies are tender, stirring occasionally.
