Creamy Microwave Double-Decker Fudge
bullet1 cup Peanut Butter Chips
bullet1 cup (6 oz) Semi-sweet Chocolate Chips
bullet1 14oz can Sweetened Condensed Milk (not evaporated)
bullet1 tsp Vanilla Extract

In 2-cup glass measure, combine peanut butter chips and 2/3 cup sweetened condensed milk.

Cook in microwave oven on 100% power, 1 to 1 min, stirring after 1 minute, until chips are melted and mixture is smooth.

Stir in tsp vanilla. Spread evenly into wax paper-lined 8-in. square pan.

In 2-cup glass measure, combine remaining sweetened condensed milk and chocolate chips, repeat above microwave procedure.

Stir in remaining tsp vanilla. Spread evenly onto peanut butter layer.

Chill 2 hours or until firm. Turn onto cutting board, peel off paper and cut into squares. Store covered in refrigerator.

Variations: Experiment by substituting other-flavored chips, such as milk chocolate, white chocolate, butterscotch, raspberry chocolate, etc.

Foolproof Dark Chocolate Fudge
bullet3c (18 oz) Semi-sweet Chocolate Chips
bullet1 can (14 oz) Sweetened Condensed Milk
bulletdash Salt
bullet to 1 cup Chopped Nuts (optional)
bullet1 tsp Vanilla Extract

In heavy saucepan, over low heat, melt chips with sweetened condensed milk and salt. Remove from heat, stir in (nuts and) vanilla.

Spread evenly into wax paper-lined 8-in. or 9-in sq. pan. Chill 2 hours or until firm. Turn fudge onto cutting board.

Peel off paper and cut into squares. Store loosely covered at room temperature.

Mint Middle Variation: As above, but melt only 12 oz semi-sweet chips with one cup sweetened condensed milk. Add vanilla.

Spread mixture into 8 or 9-sq. in. pan, chill 10 min. Hold other half at room temp.

Melt 6 oz of white chips with remaining sweetened condensed milk, add 1 Tbsp peppermint extract and green food coloring.

Spread onto chilled chocolate layer, chill 10 minutes. Spread reserved chocolate mixture onto mint layer. Chill 2 hours. Turn, etc.
